How could someone build an app, but not have the code?
You'd be surprised. It's much more common than you might think. Non-tech founders work with developers all the time. And unfortunately, many do a piss poor job transitioning the project over to the client.
I know you don't want to "deal" with your tech and the code, but you really must do the bare minimum and own it. Owing the tech gives you the power to move away from a bad relationship anytime you want.
In fact, this is the exact reason I require all clients to setup their own 3rd part services, such as payment systems, analytics, servers, etc. Not because it's fun for them, but because you'll need it someday when the shit hits the fan.
